On the palate it is tense and long-haul, with a saline finish that respects its place of origin -very close to the sea-, resembling Galician and Portuguese whites.
VINEYARD
Our vines grow at the foot of Cerro del Toro, in Piriapolis, just 2 kilometers away from the coast in a microclimate with a deep influence of the sea breeze. The orientation of each plot, on loamy and stony soils with steep slopes, gives the vineyard the ideal setting to deliver quality grapes. The best agricultural practices with low environmental impact allow us to conduct a sustainable production.
WINEMAKING
The grapes come from a sustainable vineyard and were harvested in February from plots SUR 6, NORTE 10, 11 and 16, planted on the northeast slope of Cerro del Toro. The plants grow on a soil with a loamy texture, with the presence of syenite and metamorphic rocks. Once the fruit entered the winery, the clusters were destemmed and the must was quickly cleaned before the start of the alcoholic fermentation, which was activated with selected yeasts at 16 ° C.
